Escapar and its reflexive escaparse are often interchangeable, but escaparse tends to emphasize the spontaneous or accidental aspect (se me escapó un secreto = 'a secret slipped out of me'). Escaparse de introduces the thing escaped from. The noun is escape (also used for a gas leak or a car exhaust).
