Usage Note

Ternera has two related but distinct uses: the meat of a young cow (veal or young beef, widely eaten in Spain), and the animal itself—a young female cow (heifer). In butcher and restaurant contexts it almost always means the meat; filete de ternera is a common dish. The male equivalent for the animal is ternero. In Latin America ternera as meat is less common; res or novillo tend to be preferred terms.
