Usage Note
Cordero refers both to the young sheep and to its meat, making it the default word on menus and in recipes — no separate culinary term is needed unlike English 'mutton'/'lamb'. The female form cordera exists but is rarely used outside rural contexts. Cordero lechal (suckling lamb) is a prized delicacy in Castilian cuisine.
