Gamma with double m is the Greek letter (Γ, γ) and appears in rayos gamma (gamma rays), high-energy electromagnetic radiation. Do not confuse it with gama (single m), the unrelated word meaning a range or spectrum, as in una gama de colores. As the letter or radiation type it is feminine: la gamma.
