Pescado specifically means fish that has been caught and is used as food; the live fish in the sea is pez. This distinction — pez (alive/in water) vs pescado (caught/eaten) — is one of the first vocabulary contrasts learners encounter. Pescado is also the past participle of pescar (to fish).
